Let's experiment with a more toasted variety of wood. American Sweetheart is a blend marked by a subtle, easy-to-drink sweetness paired with an undertone of toastiness. Whether added to the warmth of vanilla oak or as the beginning of a new batch, this will deepen the tannin levels in your whiskey, giving it a deeper, more diverse flavor palette. Proceed just like with the vanilla oak, and be attentive and start with small portions of the wood chips to be able to adjust the wood content throughout the infusion process to achieve your desired strength without overpowering the spirit.
